Recipe - Breakfast oats

Oats for breakfast might be one of my favorite things.  I never get bored of them and there is so many ways to have them, overnight oats and porridge only being two of them.  Here is my basic classic oats recipe which I get creative with every morning.  

 

Ingredients:
1/2 cup oats
1 tbsp chiaseeds
1 tbsp crushed flaxseeds
1 tbsp sunflower/pumpkin seeds
1 tsp cinnamon

1 fruit (in the picture I used 1/2 mango and 1/2 banana, but you can use any)

1,5 cup plant based milk (almond, rice, oat milk or any other)

Toppings of choice

 

Method:

Mix the dry ingredients in a bowl so it mixes well.

 

Stir and let it sit for a few minutes while you chop some fruit to go on top.

Add the fruit to the bowl and top with anything you like. In the picture I've got 1 tbsp of fresh and finely chopped ginger, other suggestions are: almond butter, nuts, 1 tsp honey, 1 tbsp raw cacao.  Really explore with these as they make your breakfast fun! Sometimes I even put 1 tsp of matcha on top for some extra energy.

For overnight oats:
Heat up 1,5 cup of any plantbased milk and pour it on top.

Often I need to take breakfast with me (or want a few extra minutes in bed), so I make this the night before. Instead of heating up the milk, just stir it in together with your chopped fruit and then put it all in the fridge overnight.  If you want to keep your toppings crunchy, put them in a sandwich bag to take with you and sprinkle on top before you eat.
