Recipe - Banana pancakes

Pancakes, pancakes, pancakes... Who doesn't love them!


Here is a recipe for healthy banana pancakes which you can play around with.  I will keep sharing my basic go-to recipes over the next few weeks on here, with lots of suggestions to adjust them to your personal preferences or just to alter to whatever you have in the fridge!



2 eggs

1 small ripe banana

1/2 cup oats

1 tbsp flaxseed

Splash almond milk (or any other plant based milk)

Coconut oil


Optional for flavor, pick 1-3 of these:

1 tsp vanilla essence

1 tsp maca powder

1 tsp cinnamon

2 tsp raw cacao

1 tbsp lemon juice


Toppings used here:


Almond flakes

Coconut yoghurt

Mash the banana in a bowl.  Add the eggs and whisk it all together with a splash of almond milk.  Then add the oats, flaxseed and flavorings and let it all soak for a few minutes.  Heat a good teaspoon of coconut oil in a pan and fry either a few smaller pancakes or one big one until golden!  


Tip to flip over a big one: I sometimes slide the pancake out of the pan onto a big plate, place the pan on top and then turn it over so that the pancake doesn't break when flipping as they can get a bit heavy with the oats in them.  I've ended up with scrambled pancakes a few too many times!


Then top with anything you like.  I usually take some fruit, maybe some nuts, yoghurt and honey or almond butter.
